The Tian Vernazza
Typical dish of Vernazza, the "tian", that is pan, represents the tradition of the village.
It is a pan of thinly sliced ??potatoes, to which anchovies are added, with oil, white wine, garlic, lemon zest, fresh tomato, parsley, oregano and rosemary.
Ingredients for 4 people :
- 5 yellow-fleshed potatoes
- 800 grams of fresh anchovies
- 500 gr of tomato puree
- 200 gr of fresh cherry tomatoes
- Pine nuts
Carefully clean the anchovies and open them like a book by removing the bones. Peel the potatoes and cut them into thin slices, then heat the oil in a pan and brown them.
Take a low-sided baking tray and line it with a sheet of parchment paper. Add a little oil and place the potato slices on top of each other up to the edge of the pan. Salt a little and add the tomato puree with oregano, oil, salt and pepper. Now cut the cherry tomatoes and add them to the puree, adding salt and pepper.
Place the anchovies on top, spreading the pine nuts, season with oil and oregano, salt and pepper and bake at 180 C for 15 minutes.
